Color: The color is green with subtle golden-yellow tones.
Sensory Profile: On the nose, it opens with a complex and elegant bouquet, revealing a rich tapestry of vegetal notes. The flavor is broad and structured, with distinct hints of thistle, fresh almond, and freshly cut grass. The finish is marked by pronounced bitterness and spiciness, perfectly balanced in harmony.
Pairings: An oil with a bold character. Recommended with gratinated vegetables, steamed legumes, red fish soups, minestrone, and grilled red meats.
